Hiroko Matsuda, Ph.D. is a Project Assistant Professor of Graduate School of Marine Science and Technology at Tokyo University of Marine Science and Technology. Additionally, I am a project researcher of Graduate School of Agricultural and Life Sciences, The University of Tokyo. My research focuses are to understand the functions and mechanisms of food components, especially phytochemical. Not only that, I also focus on cooking methods aimed at improving nutritional functions of food components.
