Dr. Lu Qi obtained a medical degree in China and PhD at Tufts University in the United States. He is now an Associate Professor of Medicine at Harvard Medical School and an Associate Professor of Nutrition at Harvard School of Public Health. He is also Adjunct Professor at Peking University, China; and Distinguished Professor at Shanghai Jiao Tong University School of Medicine, China. Dr. Qi’s major research interests have focused on nutritional and genetic epidemiology of obesity, type 2 diabetes and related cardiovascular diseases. His recent research topics also include epigenetics and metabolomics, and the complex interactions between omics events and lifestyle/diet factors in relation to metabolic disorder. He has extensive experience in leading epidemiology and genetic studies in large cohorts, randomized clinical trials, and international collaborations. He is currently the Principal Investigator of five NIH-funded grants, and several grants funded by other foundations. He serves as Editor-in-Chief for World Journal of Diabetes; Associate Editor for BMC Medical Genetics, Regional Editor (North America) for Current Diabetes Reviews; and severs as editorial board member for several journals such as Journal of Nutrition, Nutrition Reviews, and Annals of Nutrition & Metabolism. He was awarded ‘Roger R. Williams Award for Genetic Epidemiology (2008)’, ‘The Mark Bieber Award (2009)’, and ‘Jeremiah and Rose Stamler Research Award for New Investigators (finalist; 2010)’ by American Heart Association; and ‘Michaela Modan Memorial Award (2010)’ by American Diabetes Association. Marly A. Cardoso holds a PhD in Food Science and Experimental Nutrition from the School of Pharmaceutical Sciences and a Qualified University Lecturer in Public Health at the University of Sao Paulo, Brazil, where she is Associate Professor of Nutritional Epidemiology and Chair of the Department of Nutrition at the University of São Paulo (USP) School of Public Health. She is currently research member of the Center for Epidemiological Studies in Health and Nutrition of the University of Sao Paulo (NUPENS, http://nupensusp.wix.com/nupens ), and in 2012 she was Lemann Visiting Scholar of the David Rockefeller Center for Latin American Studies at Harvard University. Considering the nutritional transition in Brazil, she has been working on nutritional surveys in the Amazon region. The fieldwork has been done with the participation of community health agents, nursing students from Federal University of Acre, and university level health professionals with training and local supervision by her research team. He started his career in Biochemical research in the Laboratoire de Biochimie of the Ecole Polytechnique l’X, Paris (France) and progressed his career in the Top Institute Food and Nutrition in biotechnology, nutrition and food technology (the Netherlands). He was teacher fellow of the master degree courses in “Nonlinear Dynamics of Chemical Processes” and of “Statistical Methodsfor Data Analysis” at Università di Napoli “Federico II”, Italysince 2005. In 2007, he was teacher at the Summer School in Numerical Methods for Process Dynamics Analysis - University of Sannio, Italy; in 2008 he was guest lecturer at the Advanced Course in Control Quality and Management in Food Industries - University of Salerno, Italy. In 2012 and 2013 he worked as distinguished reviewer for the Chilean National Commission for Scientific and Technological Research (CONICYT), Ministry of Education, Government of Chile. He also serves as a reviewer for several archival journals.

His research activities are within the broad areas of complex non linear systems and mathematical modeling in Chemical Engineering. They include applications in the field of food engineering, polymer science and phase transitions with both continuum mechanics and microscopic (Molecular and Coarse-Grained Dynamics) simulations.

Dr. John Kenneth Mensah obtained his PhD in Bio-Organic Chemistry from the University of Houston in Texas in 2000. After graduation, Dr. Mensah then received postdoctoral training in Developmental Biology at the University of Texas Health Science Center in Houston, Texas and in Cancer Biology at the James Graham Brown Cancer Center in Louisville, Kentucky. Presently, Dr. Mensah is a senior lecturer in Chemistry at the Kwame Nkrumah University of Science and Technology in Kumasi, Ghana. His research interest is an interdisciplinary blend of Organic Chemistry and Molecular Biology. The dynamic and interdisciplinary nature of Dr. Mensah’s research is evidenced by co- authored papers which span a broad range of topics, from basic to translational and applied science. His current research focus is on the assessment of the antioxidant and antimicrobial potential of secondary metabolites isolated from pure cultured fungi endogenous to Ghana. Dr. Mensah has mentored many undergraduate and graduate students in both the USA and in Ghana.

Dr. Junpeng Wang received his Ph.D from State Key Laboratories of Agro-biotechnology at China Agricultural University in 2008. He became an instructor at Henan University from 2008 to 2009. He was a post-doctoral fellow at Tufts University from 2010 to 2012 and was promoted to Scientist III in 2013. He became an associated professor at Translational Medical Center of Huaihe Hospital at Henan University and was an adjunct Scientist at Tufts University since 2015.

Dr. Wang’s research has focused on effect of nutrients, phytochemicals, exercise, and functional food on immune function and inflammatory responses, T-cell mediated autoimmune diseases, and host resistance to infection in human and animal models.

Bing-Huei Chen, male, food scientist, received his Ph.D. degree in Food Science & Technology, Texas A & M University, USA in 1988. His postgraduate career includes working at Fu Jen University, Taipei, Taiwan as Associate Professor from 1988–1994, Professor from 1994–2000, Distinguished Chair Professor from 2004–present, Chair of Department of Nutrition and Food Science from 1994-2000, Director of Graduate Institute of Medicine from 2006–2009, and Dean of College of Human Ecology from 2012–2015. He specializes in Lipid Chemistry, Pigment Chemistry, Instrumental Analysis, Food Toxicology, Functional Food Development and Biological Activity Determination as well as Nanotechnology. Dr. Karen Poon obtained her B.Sc. and M.Phil. from the University of Hong Kong, her Ph.D. from the University of Toronto, Canada. She is currently the Associate Professor in the Division of Science and Technology, Beijing Normal University – Hong Kong Baptist University United International College. She was granted with invention right by the University of Toronto on a DNA biotechnology in 2000, and she has also successfully filed several patents on biotechnology in China. She has received many awards including Sir Edward Youde fellowship (1989), an honor of Zhuhai high-level talent granted by Human Resource and Social Security Office, the People’s Government of Zhuhai Municipal, China (2014), an Individual award of Innovative technology 2016, awarded by China Scientist Forum 2016. Hiroko Matsuda, Ph.D. is a Project Assistant Professor of Graduate School of Marine Science and Technology at Tokyo University of Marine Science and Technology. Additionally, I am a project researcher of Graduate School of Agricultural and Life Sciences, The University of Tokyo. My research focuses are to understand the functions and mechanisms of food components, especially phytochemical. Not only that, I also focus on cooking methods aimed at improving nutritional functions of food components.

Dr. Ihsan Ullah is assistant professor at the department of Biological Science, Faculty of Science, King Abdulaziz University, Kingdom of Saudi Arabia. He has obtained his Ph.D. degree from School of Applied Bio-Science, Kyungpook National University, South Korea. He is expert in the fields of full genomic, proteomic, metabolomics analysis of bacteria, plant microbe interactions, plant molecular analysis, plant growth hormones analysis and secondary metabolites analysis. Moreover, during the post-doc he studied the gene transfection and molecular mechanism in Arabidopsis plant. The major focus of his study is on plant microbe interaction.

His research interests are genomic, proteomic and metabolomic analysis of microbes especially bacteria. Plant microbes interactions and plant molecular analysis.

Dr. Yeu Ching Shi received her PhD degree from Institute of Microbiology and Biochemistry, National Taiwan University, one of the finest research institutes in this field worldwide. During her PhD program, she performed extensive research in diabetes pharmacology, molecular biology and protein biochemistry. Her innovation on research strategy and diabetes treatment strategy design was recognized by medical researchers around the world and has important practical impact on health care. Dr. Shi successfully isolated and identified the anti-diabetes compound from traditional Chinese medicinal fungi. This discovery no doubt will have profound impact on drug discovery for diabetes in the United States.

Dr. Shi’s research focuses on the design and development of natural compounds capable of improving and treating neurodegenerative disease. Her research has advanced the frontier of antidepressant drug discovery. In addition, Dr. Shi is widely acclaimed for her discovery of the role of oxidative stress in neurodegenerative disease as well as her discovery of neuro-protective effects of selenium on lead-induced neurotoxicity. Dr. Shi’s academic publications are well recognized by the research community as demonstrated by the significant number of citations that follows her publication. Her seminal work has formed the basis of several novel projects on-going in other groups.

Dr. Pin-Der Duh received his Ph.D. from National Chung-Hsing University, Taiwan, ROC in 1994. He became a Professor at Department of Food Science and Technology, Chia Nan University of Pharmacy and Science in 1998. Professor Duh has focused his research on Functional Foods and Nutraceuticals, Phytochemicals and Gene expression of Biological compounds. Until now he has authored and co-authored more than 70 original articles in scientific journals and authored 1 book chapter in edited book.. He also serves as a reviewer for several scientific journals. He received two patents and many rewards and honors including Awards of Industry-Academy Cooperation, awarded by Chia Nan University of Pharmacy and Science in 2013-2016 and Gold Medal Award in 2017 Taipei International Invention Show & Technomart.

She obtained a pharmacist degree in 2002 in Turkey and completed her MSc thesis in 2005 and PhD thesis in 2011 at Gazi University Faculty of Pharmacy Department of Pharmacognosy. She achieved associate proffesor degree in Pharmacognosy and Pharmaceutical Botany field in 2013. She was a research & teaching assistant between 2002-2013 and still working at Gazi University as an associate proffesor. She is a lecturer in Gazi University Faculty of Pharmacy Graduate Program, Gazi University Institute of Health Sciences Phytotheraphy Master of Science Program and Pharmacognosy Master of Science & Doctor of Phylosophy Programs. Her major research interests have focused on in-vivo and in-vitro biological activities of natural products and traditional medicinal plants of Turkey. She is also experienced in qualitative and quantitative analysis of food and plant extracts and application of pharmacopoeia methods. She had The Turkish Pharmacists’ Association Academy of Pharmacy Encouragement Award in 2015. She completed 7 research projects, published 31 manuscript in science citation index (SCI) and SCI-expended journals and 9 articles in other journals. She wrote 5 book chapters, joined 20 international/national meetings and presented 1 invited lecture, 8 oral presentations and 30 posters. She is a member of Phytochemical Society of Europe, Society of Medicinal Plant Research, Society of Pharmacognosy and Phytotherapy, Turkish Pharmacists’ Association. She has been Associate Editor of FABAD Journal of Pharmaceutical Sciences (2013-2016) and still editorial board member of SM Journal of Urology and African Journal of Traditional, Complementary and Alternative Medicines. She is also a reviewer in 10 international/national journals.

He is now an researcher at Institute of Digestive disease, The Chinese university of Hong Kong, Hong Kong. He also serves as editorial board member of Journal of Food Science and Nutrition Therapy, Scientia Ricerca (Nutrition and Food Toxicology), International Journal of Clinical Virology. He was awarded “Early Career Investigator” by American Gastroenterological Association (2017).

Paweł Bryła is an associate professor at the Department of International Marketing and Retailing, Faculty of International and Political Studies, University of Lodz, Poland. He graduated from international studies at the University of Lodz and was awarded the title of Master of Arts in European Political and Administrative Studies by the College of Europe in Bruges, Belgium. In 2004, he was a trainee at the Directorate-General for Agriculture of the European Commission in Brussels. For 8 years, he was responsible for managing the Erasmus programme at his faculty. He obtained his Ph.D. in management in 2005 and the degree of habilitation in 2016. His research interests include origin and organic food marketing, the role of health claims in food marketing and consumption, and international student mobility. He has led several research projects at the national level and coordinated Polish teams in international research projects. He has published 3 monographs in the field of food marketing and over 60 articles in leading national and international journals, including Appetite, British Food Journal, Quality Assurance and Safety of Crops & Foods, Problemy Ekorozwoju, Academy of Management Learning and Education. He is the member of the editorial board at 11 international academic journals, including European Journal of International Management. He was awarded a scholarship for outstanding young researchers by the Polish Minister of Science and Higher Education and he received an award from the Polish Academy of Sciences as well as several Rector’s prizes.

• Dr. Özlem KIZILIRMAK ESMER was born in İstanbul. She took her basic education from Ege University, Engineering Faculty, Food Engineering Department. She performed her Master of Science and Ph.D. degree at Food Packaging subdivision of Ege University, Engineering Faculty, Food Engineering Department. She went to Department of Food Science, Universita degli Studi di Foggia, Italy on July, 2008 as Visiting Lecturer and Researcher. She is working as Assistant Professor and head of Food Packaging subdivision since 2009.

Her research areas are modified atmosphere packaging technology, innovative food packaging technologies, food and packaging interactions. She is also working as a scientific member of Turkish Food Codex -Commission of Materials and Articles in Contact with Food. She made organization committee member of several international and national congresses. She is a member of Chamber of Food Engineers.

Bing-Huei Chen, male, food scientist, received his Ph.D. degree in Food Science & Technology, Texas A & M University, USA in 1988. His postgraduate career includes working at Fu Jen University, Taipei, Taiwan as Associate Professor from 1988–1994, Professor from 1994–2000, Distinguished Chair Professor from 2004–present, Chair of Department of Nutrition and Food Science from 1994-2000, Director of Graduate Institute of Medicine from 2006–2009, and Dean of College of Human Ecology from 2012–2015. He specializes in Lipid Chemistry, Pigment Chemistry, Instrumental Analysis, Food Toxicology, Functional Food Development and Biological Activity Determination as well as Nanotechnology. Until now he has published 179 research articles in internationally renowned journals and authored 11 book chapters in edited books published by International Publishers. She was a research integrated-member at the Associated Laboratory REQUIMTE from 2006-2017, being currently a collaborator member.
